Creamy Taco Soup: An Easy Gluten-Free, Lower-Carb Dinner

There are some meals that just make life easier, and this Creamy Taco Soup is one of them.

It is simple, comforting, and easy to make on the stovetop in one pot. If you are looking for a dinner that feels cozy without being complicated, this is a great one to keep in your rotation. I also love that it can be made with ground turkey, beef, or chicken, depending on what you have on hand.

For women over 50, I think meals like this matter. We do not always need fancy recipes. Sometimes we just need something warm, filling, and easy to get on the table. This creamy taco soup is one of those meals.

It is also a great option for families who are trying to eat a little simpler. And if you need gluten-free meals, this recipe can fit well too. Just make sure you check the labels on your taco seasoning, broth, and other packaged ingredients.

Gluten can hide in more places than we realize, including everyday ingredients. I share more about this in my article, Gluten Is Not Just in Food

    Notes

    Notes
    – You can use ground turkey, beef, or chicken based on what you prefer.
    – The onion and green pepper are optional, so this recipe is easy to simplify.
    – If using cream cheese, let it soften a bit first so it melts more easily.
    – If you need this recipe to be gluten-free, always check the label on your taco seasoning and broth. Some brands may contain gluten or cross-contact warnings.
    Storage and Reheating
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
To reheat, warm gently on the stovetop or in the microwave. If the soup thickens after being refrigerated, you can add a splash of broth or water when reheating.

    Serving Ideas

This soup is delicious on its own, but you can also serve it with:

    • A side salad
    • Gluten-free crackers
    • Shredded cheese
    • Avocado
    • Sour cream
    • Fresh cilantro

If you are keeping things lower carb, it works well just as it is.
